Turn chicken into flavorful, fancy entrees

Are you looking for new and tasty ways to prepare chicken? These recipes for Dijon Chicken and Baked Curry Chicken with Chutney Glaze were demonstrated on our former cooking show, “;The Electric Kitchen,”; and have become favorite standbys when cooking to impress family and dinner guests.

The Easy Honey Mozzarella Chicken is sure to please children and adults, and it really is easy to prepare.

 

Dijon Chicken

3 pounds boneless, skinless chicken breasts
1/2 cup flour, seasoned with salt and pepper
2 tablespoons olive oil
1 teaspoon minced garlic
1/3 cup Dijon mustard
2 to 3 large sprigs fresh rosemary
1 cup shredded mozzarella, provolone or Swiss cheese

Preheat oven to 325 degrees.

Dredge chicken in seasoned flour.

In a large skillet, heat olive oil; lightly brown garlic. Add chicken and brown on both sides; remove and place in baking pan.

Spread mustard over chicken. Sprinkle with rosemary leaves. Place remaining rosemary sprigs in baking pan. Cover with foil and bake 20 minutes.

Remove foil and bake 10 more minutes, or until brown.

Sprinkle cheese over chicken and bake until cheese melts, 10 more minutes. Serves 6.

Baked Curry Chicken with Chutney Glaze

5 pounds boneless skinless chicken thighs
Vegetable oil spray
1 cup flour
1-1/2 tablespoons curry powder
1 tablespoon Hawaiian salt
1/4 teaspoon black pepper
1-1/2 teaspoons garlic powder
1-1/2 teaspoons minced ginger
1 cup evaporated milk
Olive oil
3/4 cup mango chutney
2 tablespoons brown sugar
2 tablespoons Worcestershire sauce
2 tablespoons white wine

Preheat oven to 350 degrees. Spray a large baking pan with vegetable spray.

Combine flour, curry powder, salt, pepper, garlic powder and ginger. Dip chicken in milk and roll in flour mixture.

Place chicken in prepared pan; brush with olive oil. Bake 20 minutes, turn and brush again with olive oil. Bake 20 more minutes.

Combine chutney, brown sugar, Worcestershire sauce and wine; brush on chicken; bake 10 minutes.

Turn chicken; brush with more chutney mixture and bake 10 more minutes. Serves 10.

Easy Honey Mustard Mozzarella Chicken

4 skinless, boneless chicken breast halves
3/4 cup honey
1/2 cup prepared mustard
Lemon pepper to taste
4 slices bacon, cut in half
1 cup shredded mozzarella cheese

Preheat oven to 375 degrees.

Place chicken in baking dish and drizzle evenly with honey and mustard. Sprinkle with lemon pepper. Bake 25 minutes.

Top each breast half with 2 half-slices bacon, and sprinkle with cheese. Continue baking 10 minutes, until chicken juices run clear. Serves 4.
