Cookbook offers ideas to begin and end meals

Looking for tasty, new recipe ideas to share with party guests? Hawaiian Electric's employees, retirees, families and friends share their special recipes for potluck get-togethers in a new cookbook, “;A Taste of HECO 2009.”;

The cookbook combines pupu and dessert recipes on a “;pop-up”; stand that makes it easy to read while cooking.

Proceeds from cookbook sales will benefit Aloha United Way. The book cost is $10, available at HECO's Customer Service Offices. To order by mail, add $4.80 postage for up to two copies, $9.80 for three to 10. Make checks payable to HECO and send to HECO-CID, HECO Cookbook, P.O. Box 2750, Honolulu 96840-0001.

  Here's a sampling of the recipes you'll find in the new cookbook.

 

Drunken Shrimp

1-1/2 cups gin (or 3/4 cup gin and 3/4 cup water)
2 cups flour
2 tablespoons Hawaiian salt
2 teaspoons pepper
1/2 teaspoon hot pepper sauce (such as Tabasco)
1 tablespoon ko choo jung (Korean hot sauce)
1 tablespoon minced garlic
5 pounds shrimp (26- to 30-count size), unpeeled
Oil for frying

Mix all ingredients except oil. Refrigerate for a few hours.

Deep-fry shrimp in hot oil until crisp. Serves 20 as appetizer.

Approximate nutritional information, per serving: 250 calories, 9 g total fat, 1 g saturated fat, 170 mg cholesterol, 600 mg sodium, 10 g carbohydrate, no fiber or sugar, 19 g protein

 

 

$1,000 Prize Recipe for Chicken

6 chicken breast halves
Garlic salt, pepper AND paprika, to taste
1/2 cup butter
1/4 teaspoon dried basil
1/4 cup chopped onions
1 can (4 ounces) mushrooms
1/4 cup sherry or white wine
Juice of 1 lemon
1 can (10-1/2 ounces) cream of mushroom soup

Preheat oven to 350 degrees.

Place chicken in baking dish. Sprinkle with garlic salt, pepper and paprika.

In saucepan, combine butter, basil, onions, mushrooms, sherry, lemon juice and mushroom soup. Heat to melt butter, then pour over chicken. Bake 75 minutes. Serve with hot rice. Serves 6.

To cook in slow cooker: Cook all ingredients on low for 4 to 6 hours.

Hawaiian Delite Cake

1 package (18.5 ounces) yellow or butter cake mix
1 can (20 ounces) crushed pineapple, drained, reserving liquid
8 ounces cream cheese
1 box (3.4 ounces) instant vanilla pudding
1 cup cold milk
8 ounces whipped topping
1/2 cup finely chopped macadamia nuts
Flaked coconut, optional

Preheat oven to 325 degrees. Grease a 13-by-9-inch baking pan.

Prepare cake mix according to package directions, using reserved pineapple juice in place of some of the water. Cool.

Mix cream cheese and pudding. Gradually add milk; beat until smooth and thick. Fold in pineapple. Fold in whipped topping. Spread over cooked cake. Sprinkle top with nuts and coconut. Chill. Serves 20.
