Holiday Brisket
1 beef brisket (5 to 6 pounds), very well trimmedSeason brisket on all sides with salt and pepper. Place in a shallow roasting pan. Evenly top with, in order, garlic, onions, ketchup, Worcestershire sauce and thyme.

3 cloves garlic, minced
2 cups sliced onions
1-1/2 cups ketchup
1/4 cup Worcestershire sauce
2 teaspoons dried thyme
1 pound carrots, peeled and sliced on diagonal, 1/2-inch thick
1 pound small yams, peeled and sliced 1/2-inch thick
2 cups (12 ounces) pitted prunesAdd water to a depth of 1/4 inch. Cover loosely with aluminum foil and roast 3 hours at 325 degrees. During entire roasting time, baste occasionally and add water if needed to maintain 1/4-inch level.
Add carrots around brisket; cover and roast 45 minutes. Add yams and prunes; roast 1 hour or until vegetables and brisket are tender. Let stand 10 minutes. Slice brisket across the grain. Serve with prunes, vegetables and pan juices. Accompany with potato latkes. Makes 8 servings.
