Kinoshita focuses on use of
organic produce

The Sunset Grill restaurant is getting all of its greens for salads from organic farmers in Kona and Waimanalo, the restaurant's new executive chef says.

"We already use 40 cases a week of organic greens for our salads," said Sean Kinoshita. "But I'll also be working with individual farmers to get specialty produce to enhance my recipes - artichokes or white carrots or zucchini blossoms, for example. I am expanding my network of farmers so I can continue my exploration of what I call 'North American cuisine'"

Kinoshita received his early culinary experience at fine restaurants in San Francisco and New York.

He most recently was executive chef at A Pacific Cafe in Honolulu. Kinoshita also worked on Kauai with restaurateur Jean-Marie Josselin.

Kinoshita grew up in Waiakea on the Big Island and graduated from the California Culinary Academy in San Francisco.
