Food studies at JMD

Sign up to cook with the best at the JMD Educational Center in Halawa Valley. The University of Hawaii at Manoa College of Continuing Education & Community Service is offering a series of noncredit classes with top isle chefs.

The single sessions run 10 a.m. to noon on Saturdays and the cost is $38. Call 956-8244 for information or 956-8400 to register.

The first class is Sept. 14, with 3660 on the Rise chef de cuisine James Gillespie presenting "More Euro-Island Cuisine," a fall menu including Herb-Seared Scallops and Pan-Seared Opah over Stir-Fried Wonbok with Pancetta Cracklin Jus.

Pineapple passion

Forty recipes from the annual Chef's Pineapple & Papaya Recipe Challenge are available in a 5-1/2" by 8-1/2" cookbook. Recreate Avelino Miranda Jr.'s (Oceanarium) Papaya Crab Tartar, or Richard Acdal's (Dole Ballrooms) Pineapple and Pistachio Crusted Opakapaka with Papaya Mint Mojo.
