"We already use 40 cases a week of organic greens for our salads," said Sean Kinoshita. "But I'll also be working with individual farmers to get specialty produce to enhance my recipes - artichokes or white carrots or zucchini blossoms, for example. I am expanding my network of farmers so I can continue my exploration of what I call 'North American cuisine'"
Kinoshita received his early culinary experience at fine restaurants in San Francisco and New York.
He most recently was executive chef at A Pacific Cafe in Honolulu. Kinoshita also worked on Kauai with restaurateur Jean-Marie Josselin.
Kinoshita grew up in Waiakea on the Big Island and graduated from the California Culinary Academy in San Francisco.
