Ko Olina hooks new executive chef

When Prince Andrew celebrated his 31st birthday at Balmoral Castle in Scotland in 1989, the guest chef was Mark Adair. He orchestrated a seven-course dinner for 500 guests. Adair will apply that talent to his new position as executive chef at Oahu's Ihilani Resort & Spa at Ko Olina.

"There are endless opportunities for creativity with the fresh seafood, exotic fruit, seaweeds and farm-fresh vegetables that surround me in Hawaii," Adair said.

His nine years as an executive chef have led him to hotels and restaurants in France, Switzerland and Scotland.

Adair also has served as the top chef at the Westin Resort in Vail, Colo., and at the Oaks on the Plaza at the Double Tree Hotels in Phoenix; Pasadena, Calif.; and Aurora, Colo.

Adair, having trained in France and the United States, is a certified culinarian and has won many awards. His achievements include a five-course luncheon in 1991 prepared for then-President George Bush, and a 1990 dinner where he was executive chef for a team that prepared a different dessert for all 180 diners.
