Crowd-pleasing favorites perfect for summer parties
Last week we shared favorite summertime recipes for a cookout meal and that just made us ono for more favorite summertime foods. We tapped a few more employees known for their crowd-pleasing signature dishes that always have people asking, "Can I have your recipe?"
The Kielbasa and Peppers make a nice pupu when served on its own or a great sandwich filling for a hearty meal. The Local-Style German Potato Salad is well worth the time it takes to make - it's one of our all-time favorites. And the Mountain Fresh Pudding is a simple make-ahead dessert that provides a refreshing and not-too-sweet ending to a perfect summer meal!
Local-style German Potato Salad
8 to 10 red potatoes
2 to 4 russet potatoes, pared
18 slices thin-sliced bacon, chopped
1 onion, thinly sliced
7 hard-cooked eggs
1 can (6 ounces) olives, sliced
1 cup sour cream (consider using reduced- or no-fat sour cream)
2 to 2-1/2 cups mayonnaise (consider using reduced- or no-fat mayonnaise or mayonnaise made with canola oil)
Salt to taste
Cut potatoes into quarters and cook until just done. Drain, cool, and dice.
Cook bacon until crisp. Remove; save 1 tablespoon of drippings.
Cook onion in bacon drippings until clear; drain.
Separate egg whites and yolks; chop whites and crumble yolks.
In a large bowl, add portions of potatoes, bacon, onion, egg whites, olives, sour cream, mayonnaise and salt; mix gently after each portion is added. Top with egg yolks. Chill. Serves 16.
Approximate nutritional analysis, per serving (without salt to taste): 550 calories, 35 g total fat, 11 g saturated fat, 135 mg cholesterol, 700 mg sodium, 45 g carbohydrate, 4 g fiber, 5 g sugar, 13 g protein.
Kielbasa and Peppers
1 package (16 ounces) Polska Kielbasa sausage (such as Hillshire Farm)
2 tablespoons butter
3 cloves garlic, minced
1 medium onion, quartered
2 bell peppers (green, red, orange or yellow), thinly sliced
1/4 cup lager-style beer
Salt and pepper, to taste
Grill or broil whole sausage, then cut into 1/4-inch thick diagonal slices.
Heat a large skillet over medium-high heat, add butter, garlic and onion; saute until onion is lightly browned and translucent.
Add peppers and continue to saute until peppers are cooked but still crisp.
Add sausage and beer; cook on high heat until beer evaporates. Season with salt and pepper. Serves 4.

Mountain Fresh Pudding
2-1/2 envelopes unflavored gelatin
1/3 cup sugar
1 cup water
3-1/2 cups milk
1 teaspoon almond extract (or 1/2 teaspoon each lemon and vanilla extract)
Canned fruit of your choice
Fresh fruit of your choice
In a large saucepan, combine gelatin, sugar and water over low heat and stir until gelatin and sugar are dissolved. Add milk and flavoring. Pour into a 9-by-13-inch pan and chill until firm.
Cut into 1/2-inch squares and put in bowl. Add canned fruit (such as lychee, Mandarin oranges or peaches). Add fresh fruit (such as grapes or berries) just before serving. Serves 12.
