Master baker leads breadmaking classes

If you are seriously into baking bread you'll want to mark your calendar for early June, when Y. Hata & Co. hosts workshops in artisan breads.

Leading the baking will be French master breadmaker Didier Rosada.

His first session will be a master class June 9 to 11 for professional chefs at Bale Bakery on Dillingham Boulevard; $600. A class for home bakers will be June 12 to 13 at Y. Hata's Corporate Kitchen on Sand Island Road; $400. Classes run 8 a.m. to 4 p.m. each day.

Rosada is head Instructor at the National Baking Center in Minneapolis and the San Francisco Baking Institute. He trained and led the Bread Bakers Guild Team USA to victories at the Paris Coupe du Monde de la Boulangerie in 1996 and 1999.

Both workshops will cover the entire process, with a focus on whole grains and bread types from baguettes to pear buckwheat bread. They will be hands-on sessions in which participants will try out Rosada's formulas to create their own loaves.
