Book energizes local charity
For several years, Hawaiian Electric Co. employees, retirees, families and friends have donated their favorite recipes and shared them in a benefit cookbook. In 2008, proceeds from the sale of "A Taste to Remember -- Volume 4," once again will benefit the Aloha United Way.

As a sponsor of the city's annual Lei Day celebration, we've selected a handful of no fuss, full-flavored local-style recipes from the cookbook to share here. These "energy-efficient" recipes will leave you plenty of time to head to Kapiolani Park tomorrow for the lei contests, hula performances, the crowning of the Lei Queen, food booths, crafts and music by the Royal Hawaiian Band, Makaha Sons and Kapena.

Shrimp Poke
1 bag (2-1/2 pounds) pre-cooked and shelled jumbo shrimp, thawed
1 medium Maui onion, thinly sliced
2 Japanese cucumbers, thinly sliced
2 tablespoons Japanese rice wine vinegar
1 bottle (6 ounces) kim chee base
3 stalks green onion, chopped
Combine all ingredients; toss gently. Chill. Serves 12.
Approximate nutritional analysis, per serving: 120 calories, no fat, 185 mg cholesterol, 750 mg sodium, 6 g carbohydrate, 1 g fiber, 2 g sugar, 21 g protein.
Simple Crock Pot Laulau
3 pounds pork butt
3 tablespoons Hawaiian salt
Garlic powder, to taste
2 bags (1 pound each) fresh luau leaves
1 teaspoon salt
Rub pork with Hawaiian salt and garlic powder; place in slow cooker.
Wash luau leaves; remove stems and fibrous parts of the veins. Blanch in large pot of boiling water, with the 1 teaspoon salt.
Place luau leaves crock pot, surrounding pork. Cook on high 4 hours, then reduce heat to low and cook 3 to 4 hours more. Or cook on medium heat 7 to 8 hours. Serves 8.
Approximate nutritional analysis, per serving (not including garlic powder): 450 calories, 31g fat, 11 g saturated fat, 120 mg cholesterol, 400 mg sodium, 8 g carbohydrate, 4 g fiber, 3 g sugar, 35 g protein.
Easy Lilikoi Sorbet
1 cup milk
1 can (12 ounces) frozen lilikoi juice concentrate
Juice of 1 lime
Combine ingredients and pour into shallow pan; freeze.
Blend frozen mixture in blender until consistency is similar to a smoothie. Freeze again. Serves 4.
