Next week Wednesday is Administrative Professional's Day -- formerly known as secretary's day. It's a great opportunity to thank and acknowledge the co-workers who make the workplace run smoother and make everyone else's job a lot easier. While it's a great idea to treat them out to a nice lunch, add a personal touch by taking the time to prepare a homemade gift -- you'll make them feel extra special. These recipes are fast and easy to prepare, so it won't take a lot of time to earn their appreciation!
Lemon Cheese Bars
1 package (18 1/2 ounces) yellow cake mix
2 eggs
1/3 cup vegetable oil
1 package (8 ounces) cream cheese, softened
1/3 cup sugar
1 teaspoon lemon juice
Preheat oven to 350 degrees. Combine cake mix, 1 egg, and the oil and mix until crumbly; reserve 1 cup and set it aside. Pat remaining mixture lightly into an ungreased 13 x 9 x 2-inch pan. Bake for 15 minutes. Beat cream cheese, sugar, lemon juice, and the remaining egg until smooth; spread over baked layer. Sprinkle the reserved crumb mixture over the cream cheese layer; bake for 15 minutes. Cool and cut into bars. Makes 24 bars.

Double Chocolate Brownies
1 cup butter
4 squares (1 ounce each) unsweetened baking chocolate (such as Baker's)
2 cups sugar
4 eggs
1 cup flour
2 teaspoons vanilla
1 cup chopped pecans
1 cup semi-sweet chocolate chips
Preheat oven to 350 degrees. Grease a 13 x 9 x 2-inch pan. In a medium saucepan over low heat, melt butter and chocolate. Remove from heat and stir in sugar. Add eggs, one at a time, stirring well after each egg. Stir in flour, vanilla, and nuts. Spread in pan and top with chocolate chips. Bake 40 or until toothpick inserted in center comes out clean. Makes 24 bars.
