Cherry Blossom royalty offer a taste of their culture
The 56th Cherry Blossom Festival, organized by the Honolulu Japanese Junior Chamber of Commerce, features many events to share Japanese and Japanese-American culture, along with the well-known queen contest.
These recipes are shared by 2008 festival Queen Richelle Nakata and First Princess Melissa Fujimoto.
Chicken with Miso
2 pounds boneless skinless chicken cut into bite-size pieces
1 tablespoon vegetable oil
Minced garlic, to taste
Minced ginger, to taste
1/4 cup sugar
1/2 cup miso
1/4 cup sake
1/4 cup mirin (Japanese sweet rice wine)
1 can (14-1/2 ounces) chicken broth
In a large saucepan, brown chicken in oil. Add garlic and ginger, saut until tender.
Add remaining ingredients; simmer until liquid is reduced and almost evaporated. Serves 4.
Approximate nutritional analysis, per serving: 480 calories, 15 g total fat, 3 g saturated fat, 200 mg cholesterol, 2,000 mg sodium, 28 g carbohydrate, 2 g fiber, 20 g sugar, 49 g protein.
Maze Gohan
5 cups white rice (using rice-cooker measuring cup)
1 bottle (1.8 ounces) ochazuke wakame (Japanese seaweed mix, available in Asian aisle of most supermarkets)
1 bottle (7.05 ounces) nametake (Japanese seasoned mushrooms, available in Asian aisles of most supermarkets)
3/4 cup frozen peas or frozen shelled edamame (soybeans)
Cook rice in rice cooker and place in a large bowl. Sprinkle ochazuke wakame over rice. Fold in nametake.
Place peas or edamame and a little water in microwave-safe bowl; microwave 1 minute. Drain water and add to rice mixture. Serves 10.
Approximate nutritional analysis, per serving: 350 calories, 2.5 g total fat, .5 g saturated fat, no cholesterol, 800 mg sodium, 71 g carbohydrate, 3 g fiber, 4 g sugar, 9 g protein.
Mochiko Muffins
1 box (16 ounces) mochiko flour (sweet rice flour)
1 cup sugar
1/2 teaspoon baking powder
2 eggs, beaten
3/4 cup vegetable oil
1-1/2 cups skim milk
1 can (18 ounces) tsubushian (Japanese unstrained red bean paste)
Preheat oven to 375 degrees. Grease muffin pans.
Mix together dry ingredients. Stir in eggs, oil and milk. Scoop batter into muffin cups, filling 1/2 full. Place rounded teaspoon tsubushian into each muffin cup, then cover with remaining batter. Bake 30-40 minutes. Makes 18 muffins.
