Fiber goodies a natural for Latitude 22
AS MUCH as we talk about wanting to eat more fiber and less fat, the process of making, say, an oat muffin, can seem much too complicated.
This is good for a baker such as Sharon Kobayashi of Latitude 22, who has built a business around her popular oatcakes and other fiber-filled baked goods and packaged mixes.

Latitude 22 products are sold at Costco stores, the Saturday Farmers' Market at Kapiolani Community College, Down to Earth, select Times Supermarkets and 7-Eleven stores, and online at www.akamaifoods.com.
You'll also find them at the Made in Hawaii Festival this weekend, among the 400-plus vendors offering art, bath and beauty products, clothing, accessories, jewelry, produce and more.
Cooking demonstrations will be part of the continuous entertainment, with the highlight being the 6 p.m. Saturday "Coaches Chili Cook-Off Challenge" featuring University of Hawaii coaches.
As a warm-up to the event, Kobayashi offers this recipe, adapted for home cooking from the recipe for low-fat muffins that she sells to 7-Eleven. She says it's a good "beginner" item "for people who are not used to eating 'healthy.' "
Mango Blueberry Oat Muffins
1-3/4 cups flour
3/4 cup oat flour (see notes)
1/2 cup sugar
1/2 teaspoon salt
Juice and zest from 1 lemon (about 2 tablespoons each)
1 large egg, lightly beaten
1 tablespoon extra light olive oil
1 teaspoon vanilla extract
1 cup buttermilk
3/4 cup blueberries
3/4 cup diced mango (see notes)
Preheat oven to 350 degrees. Line and spray muffin cups with cooking oil spray.
Combine and sift dry ingredients.
Combine wet ingredients. Add wet to dry, stirring just until combined (do not over mix). Gently fold in fruit. Pour into muffin cups. Bake 25 to 30 minutes, until a toothpick inserted into a muffin comes out clean.
Cool 10 minutes in pan, then invert muffins onto cooling rack. Makes 6 large or 12 small muffins.
Notes: If oat flour is unavailable, grind oatmeal in a food processor to a fine consistency. If mangoes are out of season, use all blueberries (frozen is fine).
Approximate nutritional analysis, per small muffin or half of large muffin: 166 calories, 3 g total fat, 1 g saturated fat, 18 mg cholesterol, 128 mg sodium, 4g protein, 31g carbohydrate, 1 g fiber.
