SUMMER'S longer days allow us more time to enjoy the island scenery -- and there's no better way than to have a cookout! Cooking outdoors helps save on your energy bill too -- it keeps the kitchen cool and if you're enjoying the great outdoors, there's no need to run the air conditioner!
Here are a few recipe ideas for the grill: The Curried Skewered Beef recipe is a nice alternative if you'd like to try something besides teriyaki. The Huli Huli Style Chicken is a long time favorite of ours. Don't be tempted to marinate the chicken in the sauce and then broil or grill it -- the high sugar content will cause the sauce to burn before the chicken is thoroughly cooked, so it's best to follow the recipe as written. The Grilled Hawaiian Nairagi features a Fresh Pineapple Salsa that tastes great with chicken, pork or even chips.
Curried Skewered Beef
1-1/2 pounds boneless beef
1 teaspoon seasoned salt
1 green pepper, seeded
1 onion
» Marinade:
1/4 cup vegetable oil
1 teaspoon ginger
2 cloves garlic, minced
1/4 teaspoon dry mustard
1 teaspoon curry powder
2 teaspoons Worcestershire sauce
3 tablespoons soy sauce
1/4 cup sherry or sauterne
2 tablespoons wine vinegar
Cut meat into 1-inch cubes and sprinkle with salt.
To make marinade: Combine oil, ginger, garlic, mustard, curry powder, Worcestershire sauce and soy sauce in a saucepan. Bring to boil. Cool slightly; stir in wine and vinegar. Pour over meat. Marinate about 3 hours in refrigerator.
Cut green pepper and onion into 1-inch pieces. Thread meat on skewers, alternating with pieces of green pepper and onions. Grill or broil to desired degree of doneness. Serves 6.

Huli Huli Style Chicken
5 pounds boneless, skinless chicken thighs
» Sauce:
1/3 cup catsup
1/3 cup soy sauce
1/2 cup brown sugar
3 tablespoons sherry
1 piece ginger root, crushed
1 clove garlic, crushed
Arrange chicken on rack of broiler pan or grill. Broil 6 to 8 inches from unit in electric oven for 5 to 7 minutes on each side.
Combine sauce ingredients; use to baste chicken. Continue broiling 5 to 7 more minutes on each side, basting frequently. Serves 10.

Grilled Hawaiian Nairagi
1-1/2 pounds Hawaiian Nairagi fillet (striped marlin) or other firm, white-meat fish
» Marinade:
1/2 cup soy sauce
2 tablespoons fresh lime juice
1 teaspoon grated lime rind
1/4 cup brown sugar
2 tablespoons dark rum
1 Hawaiian red pepper, seeded and minced
Cut fish into 4 portions.
Combine marinade ingredients; mix well and pour over fish. Marinate 1 hour, turning occasionally.
Basting frequently with marinade, broil or barbecue fish. Allow 10 minutes cooking time per inch of thickness, or until fish flakes easily. Serve with Fresh Pineapple Salsa (recipe follows). Serves 4.

Fresh Pineapple Salsa
1/2 fresh pineapple, chopped
1/2 cup chopped Maui onion
1/4 chopped red bell pepper
1 clove garlic, minced
2 tablespoons chopped fresh marjoram or basil
1 Hawaiian red pepper, seeded and minced
2 tablespoons fresh lime juice
1 teaspoon grated lime rind
Combine all ingredients; mix well. Makes about 3 cups.
