Jams make simple glazes for the holiday roast

MORE often than not, the simple things are the best. And that's especially true during this hectic holiday season.
With all the glitz and glamour surrounding food and entertaining these days, it's easy to get caught up in the idea that we need go through a lot of fuss for a holiday meal to taste good.
These recipes are proof that simple is delicious. The sweetness of fruit jams or jellies is a nice complement to the savory heartiness of ham, poultry or pork. Try it -- you'll see that simple is delicious.
Ham with Plum Chutney Glaze
12- to 14-pound smoked ham
1 cup plum jam
2 tablespoons finely chopped mango chutney
Bake ham in oven according to package directions.
About 30 minutes before ham is done, melt jam in a saucepan over low heat. Stir in chutney. Brush over ham. Bake 30 more minutes. Serves 15 to 20.

Stuffed Cornish Hens with Passion Fruit Glaze
6 Cornish game hens
1 package (6 ounces) long grain and wild rice
1/4 cup butter
1/2 cup passion fruit jelly
1 tablespoon lemon juice
2 teaspoons grated lemon zest
1 teaspoon seasoned salt
1/8 teaspoon pepper
Rinse and drain hens; pat dry.
Prepare rice according to package directions. Stuff hens with rice; skewer openings.
Preheat oven to 350 degrees. Place hens on a rack in a shallow pan. Roast 30 minutes.
In a small saucepan, melt butter with jelly. Stir in juice, rind, salt and pepper. Baste hens with jelly mixture and continue roasting 30 to 45 more minutes, basting frequently. Serves 6.

Mango Glazed Pork Roast
5-pound pork loin roast
1/2 cup mango jam
1/4 cup orange juice
2 teaspoons minced ginger root
Preheat oven to 325 degrees.
Put meat, fat side up, on rack in a roasting pan. Roast about 1-3/4 hours, or until internal temperature registers 160 degrees.
Combine jam, juice and ginger; brush on meat. Basting occasionally with sauce, continue cooking until internal temperature registers 170 degrees. Serves 10.
