Sweet potato dishes to be thankful for
DO NOT be alarmed, but it will be Thanksgiving next week. To that end, here are two sweet potato ideas, suited to the holiday, from new benefit cookbooks.
"OUR FAMILY Favorites Cookbook," Pearl City Nursing Home, sells for $10 or two for $18, to benefit the Resident Activity Program. Call 453-1919.
Sweet Potatoes with Pineapple
6 medium yams or sweet potatoes, cooked
1/2 cup brown sugar
1 cup sugar
1 8-ounce can crushed pineapple
3 tablespoons cornstarch
1/2 cup butter, melted
Preheat oven to 350 degrees. Peel and slice yams; arrange in baking dish.
Combine remaining ingredients in saucepan and simmer until thickened. Pour over yams. Bake until heated through. Serves 16.
Approximate nutritional analysis, per serving: 180 calories, 6 g total fat, 3.5 g saturated fat, 15 mg cholesterol, 55 mg sodium, 31 g carbohydrate, 1 g fiber, 25 g sugar, 1 g protein.
MILILANI High School Class of 2007 Project Graduation offers an "Ohana Cookbook," which includes this contribution from Carol Ichiki (Kristin's mom), who says it was a big hit last Thanksgiving.

Sweet Potato Souffle
4 cups mashed yams (from 3 large yams)
1/3 cup sugar
1 tablespoon butter
2 tablespoons maple syrup
2 large eggs
1-1/2 teaspoons vanilla
1/2 cup skim milk
» Topping:
1-1/2 cups coconut flakes
1-1/2 tablespoons flour
1/3 cup packed brown sugar
1/2 cup chopped nuts
Preheat oven to 350 degrees.
Combine first 7 ingredients in a 2-quart casserole.
Combine topping ingredients and sprinkle over yams. Bake 30 to 35 minutes. Serves 8.
Approximate nutritional analysis, per serving (using walnuts): 280 calories, 12 g total fat, 6 g saturated fat, 55 mg cholesterol, 95 mg sodium, 41 g carbohydrate, 3 g fiber, 31 g sugar, 5 g protein.
