Da Spot joins lineup at Taste of Kapolei

COME to the Taste at Kapolei for an evening of food, entertainment, a country market and a fireworks display. The oceanfront event is a benefit sponsored by the Rotary Club of Kapolei. "To date, the Taste at Kapolei has generated more than $500,000 for scholarships, educational programs, and grants," said event chairman Keola Lloyd of the Estate of James Campbell.

Many popular restaurants are participating in this year's event, including one that is relatively small in size, but BIG on aloha, flavor and value.
At Da Spot, husband-and-wife owners Ahmad Ramadan and Ako Kifuji cook up about 10 daily plate-lunch specials in their small take-out place at 908 Pumehana St.
The menu changes daily and features a wide and interesting mix of cuisines -- Egyptian, Mediterranean, Thai, Malaysian, American, Italian, French, Hawaiian and Japanese.
Plate lunches sell for $6.50 and come with rice, salad and baklava. They also offer sandwiches and more than 21 varieties of smoothies made with fruit, Tropilicious sorbets, and fruit juices or soymilk.
Da Spot is open 10 a.m. to 9:30 p.m. Mondays through Saturdays. You can also find Da Spot's offerings at a kiosk at the University of Hawaii-Manoa (near Holmes Hall and the East-West Center), during weekday lunch hours. Ahmad and Ako shared recipes for these customer favorites.
Egyptian Baked Chicken
5 pounds chicken thighs
» Marinade:
2 onions, peeled and roughly chopped
8 cloves garlic
Handful cilantro
1 teaspoon pepper
2 teaspoons ground cumin
2 teaspoons ground coriander seeds
1 teaspoon ground cardamom
1/2 teaspoon salt
1/4 to 1/2 teaspoon red chili pepper flakes
2/3 cup lemon juice
To make marinade: In a food processor, purée onion, garlic and cilantro. Add spices and lemon juice.
Marinate chicken in mixture 3 hours.
Pre heat oven to 350 degrees.
Bake chicken in covered pan 2 hours.
Broil chicken 2 minutes or until nicely browned. Serves 8.

Foul Moudamis (Fava Beans)
1 (32 ounce) can fava beans
1 tomato, chopped
1 round onion, chopped
10 cloves of garlic, chopped
1 teaspoon olive oil
Handful cilantro, chopped
Pinch salt
Pinch pepper
1 teaspoon ground cumin
1/4 cup lemon juice
Pinch red chili pepper flakes
Put all ingredients into a pot and cook on medium heat 15 minutes. Serves 8.
