Grandpa Jerry "Sambo" Saito's Spam Rice
2 cans (12 ounce size) Spam, chopped
6 cups cooked rice
2 packages (1.19 ounce size) shiofuku konbu (Japanese seasoned kelp)
1 bottle (1.9 ounce size) furikake (Japanese seasoned seaweed mix)
2 packages (10-ounce size) takuwan (Japanese pickled long white radish), drained, chopped
Fry Spam.
While the rice is still hot, press 3 cups into a 9-by-13-inch pan. Add the following in layers: Konbu, Spam, takuwan.
Add remaining 3 cups rice and press again. Sprinkle with furikake. When ready to serve, cut into bars. Serves 18.
Approximate nutritional analysis, per serving: 230 calories, 12 g total fat, 4 g saturated fat, 25 mg cholesterol, 930 mg sodium, 25 g carbohydrate, 1 g fiber, 1 g sugar, 8 g protein.*
Stuffed Shrimp
3 to 4 pounds shrimp (21/25-count size)
4 to 5 dried shiitake mushrooms, soaked in water until soft
1 pound oio (fish cake paste)
1/2 pound imitation crab, chopped
1 can (8 ounces) water chestnuts, diced
4 stalks green onions, chopped
1 tablespoon oyster sauce
1/2 teaspoon salt
Flour for dredging
4 eggs, beaten with 1 cup water
Panko (Japanese bread crumbs), for breading
Vegetable oil for deep frying
Shell, clean and butterfly shrimp, leaving tails intact. Remove stems from mushrooms, mince caps.
Combine mushrooms, oio, imitation crab, water chestnuts, green onions, oyster sauce and salt. Press a spoonful of mixture onto shrimp. Dip in flour, egg mixture and panko.
Deep-fry until golden brown. Serve with grated daikon and soy sauce, if desired. Serves 15.
