Try salmon with Okinawan sake
This dish was prepared by Bill Bruhl of Blue Water Café on "Hawaii's Kitchen" Sunday. The show airs at 5:30 p.m. on KHON/Fox.
Miso Awamori Salmon
4 7- to 8-ounce salmon steaks, deboned, skin-on
Salt and pepper, to taste
1/4 cup olive oil
1 tablespoons black and white sesame seeds, toasted
» Miso Awamori Marinade:
2 tablespoons white miso
2 tablespoons awamori (Okinawan sake)
2 tablespoons soy sauce
2 tablespoons sugar
1/2 tablespoon minced garlic
1/2 tablespoon minced ginger
Combine marinade ingredients.
Season salmon with salt and pepper, then evenly apply marinade to each steak. Marinate overnight.
Preheat oven to 400 degrees.
Heat olive oil in an ovenproof pan over medium heat. Add salmon and sear until golden brown. Season with salt and pepper. Roast in oven until an internal temperature of 115 degrees is achieved.
Garnish with sesame seeds.
