Waipahu event offers food and more Saturday
Looking for something fun to do this weekend? Check out the fifth annual Taste of Waipahu, 10 a.m. to 6 p.m. Saturday at August Ahrens Elementary School's Tucker Field.
The event will include entertainment, arts and crafts, and food booths featuring various restaurants.
Two food vendors to be featured, Bee Ishiki of Bee's Lunchwagon and the Waipahu High School Culinary Arts program shared these recipes. The Waipahu students and their instructor, Elaine Matsuo, will also be doing a cooking demonstration.

Spam Goulash
Bee's Lunchwagon
3 tablespoons vegetable oil
4 medium potatoes, cubed
1 small onion, minced
4 cloves of garlic, minced
1 can (6 ounces) tomato paste
1 can (8 ounces) tomato sauce
3 cups water
2 cans (12 ounces each) Spam, diced
1 can (11 ounces) corn, drained
1 package (16 ounce) frozen mixed vegetables
1/2 teaspoon dried oregano leaves
1/2 teaspoon dried basil leaves
Salt and pepper to taste
4 to 5 tablespoons flour, dissolved in 6 tablespoons water
In a large pot, heat oil and sauté potatoes, onion and garlic until potatoes are half-cooked. Add tomato paste, tomato sauce, water, Spam, corn, frozen vegetables, oregano, basil, salt and pepper; bring to boil. Reduce heat and simmer 20 minutes, until potatoes are tender.
Slowly stir flour/water mixture into goulash. Cook, stirring constantly, until thickened. Serves 6.
Approximate nutritional analysis, per serving (not including salt to taste): 700 calories, 43 g total fat, 13 g saturated fat, 70 mg cholesterol, greater than 1900 mg sodium, 60 g carbohydrate, 9 g fiber, 11 g sugar, 22 g protein.
Lilikoi Cream with Fresh Fruits
Waipahu High School Culinary Arts Program
1 package (8 ounces) cream cheese, softened
1/2 cup sugar
1/2 cup frozen lilikoi juice, thawed
1 cup heavy cream
Fresh cut assorted fruits such as banana, melons, kiwi, strawberries, blueberries
In large bowl of electric mixer, beat cream cheese and 1/4 cup of the sugar. Add lilikoi juice and beat until smooth and creamy; chill 20 minutes.
In small bowl of electric mixer, beat cream. Add remaining 1/4 cup sugar and beat until stiff peaks form. Fold into lilikoi mixture. Spoon over fruit. Serves 6.
Approximate nutritional analysis, per serving (not including assorted fruit): 370 calories, 28 g total fat, 17 g saturated fat, 95 mg cholesterol, 130 mg sodium, 27 g carbohydrate, no fiber, 27 g sugar, 4 g protein.
