Mango magnificent in bread pudding
These dishes were prepared by Kelvin Ro of the Diamond Head Market and Grill on "Hawaii's Kitchen" Sunday. The show airs at 5:30 p.m. on KHON/Fox.
Mango Sweetbread Pudding
5 loaves sweetbread
4 cups diced mango
5 cups milk
1 cup heavy cream
6 eggs
2 tablespoons vanilla
1 cup sugar
1 teaspoon almond extract
4 cups evaporated milk
Preheat oven to 350 degrees.
Cut or tear bread into 1-inch pieces. Arrange in baking pan. Mix in mangoes.
Combine remaining ingredients and mix well. Combine mixture with bread. Bake 45 minutes, mixing every 15 minutes.
Grilled Teriyaki Salmon
1 pound salmon fillets
1 cup prepared teriyaki sauce
Marinate salmon in sauce 12 to 24 hours.
Prepare a charcoal grill.
Grill fish until done, about 8 minutes per inch of thickness of fillet.
