[ HAWAII'S KITCHEN]

Brew up a crunchy
batch of crab cakes

These dishes were prepared by chefs from the Kona Brewing Co. on "Hawaii's Kitchen" Sunday. The show airs at 5:30 p.m. on KHON/Fox.

Kona Brewing Crab Cakes

1 pound crab meat
1/4 cups diced Maui onions
1/4 cup diced red bell pepper
1/2 cup diced hearts of palm
1 cup panko
1/2 cup mayonnaise
1/2 teaspoon kosher salt
1 tablespoon lemon juice
1 cup flour
4 eggs, beaten until smooth
2 cup panko

Combine all ingredients except flour, eggs and panko. Form into cakes about 2 inches in diameter.

Place flour, eggs and panko into 3 separate bowls.

Dip crab cakes one at a time into flour, then egg and finally panko.

Heat a nonstick pan over medium heat. Cook cakes 3 minutes per side or until hot all the way through.

Joe's Scramble

1/2 cup chopped Maui onions
1 pound ground beef
Salt and pepper, to taste
1/2 ounce butter
2 cup chopped spinach
4 eggs

Heat pan over medium high-heat and add butter. Add onions and beef, then season with salt and pepper. Use a large fork or spatula to break up meat as it cooks. Cook until medium-well done, about 6 minutes.

Add spinach and cook 1 minute. Add eggs pan and continue to cook 2 minutes. Serve immediately.
