Salmon with
a touch of Asia

This dish from Kincaid's Fish Chop & Steakhouse was featured on "Hawaii's Kitchen" Sunday. The show airs at 5:30 p.m. on KHON/Fox.

Salmon Carpaccio

1 pound raw salmon, minced
1-1/2 tablespoons green tobiko
Minced chives, for garnish
Fried wonton skins, for garnish
4 slices lemon
>> Carpaccio Sauce
1 teaspoon EACH wasabi powder, dry mustard powder and hot water
2 teaspoons EACH soy sauce, lemon juice and mirin
3 teaspoons rice wine vinegar

To make sauce: Combine wasabi, mustard powder and hot water; stir until smooth. Add remaining ingredients. Refrigerate until needed.

Divide salmon among 4 plates and brush with marinade. Top each serving with 4 clumps of tobiko. Sprinkle with minced chives. Serve with fried wonton skins and lemon slices. Serves 4.
