Sweet greens

This Okinawan dish of sweet potato leaves was prepared by Ellen Higa and Bobbi Kuba of Hui O Laulima on "The Electric Kitchen" Sunday. The program airs at 4:30 p.m. on KITV/ABC.

Kandaba Jushi

1-1/2 cups rice
7 cups water
1 tablespoon dashi no moto (Japanese soup base)
1 teaspoon salt
1/3 cup soy sauce
10 to 12 cups (packed) sweet potato leaves (or fresh spinach)

In a large saucepan, rinse rice; drain. Add water, dashi, salt and soy sauce; bring to boil. Add potato leaves; mix well and bring to boil again.

Cover and simmer 1 hour, stirring occasionally, until rice is very soft. Serves 10 to12.

Nutritional information unavailable.

Note: Canned tuna or boiled, diced pork may be added, using pork stock to replace part of the water. Canned chicken broth may also be used. Fuchiba (mugwort) may be added.
