RESTAURANT REPORT
Dining around the islands

Shellfish specialties

Hoku's celebrates the shellfish during its Mollusk & Crustacean Tapas event, Thursday to April 27.

Chefs Wayne Hirabayashi and Joshua Nudd are building a menu around oysters, scallops, New Zealand green-lip mussels, crabs and lobster. The promotion takes advantage of peak season for these shellfish and of the popularity of tapas dining, or "small plates" that give diners lots of variety in one meal.

The menu includes Jumbo Lump Blue Crab Ochazuke, Cambodian-Infused Wok Fried New Zealand Green Lip Mussels and Baked Tristan da Cunha Lobster. (Tristan da Cunha is a remote island 1,500 miles west of Cape Town, South Africa; the lobster is prized as especially sweet.)

Wine pairings will be offered with each dish, and include such rarities as Gruener Veltliner from Willi Bruendlmayer (Austria), a riesling from Weingut Niegl (Austria), Savenniere "Coulée de Serantî from Nicolas Joly (France) and Chablis 1er Cru "Montée de Tonnere" by Jean-Marie Ravenneau (France).

Hoku's is in the Kahala Mandarin Oriental Resort. Seatings are 5:30 to 10 p.m. Call 739-8780.
