‘Ohana’ favorites

These dishes were taken from the Kamehameha School Children Chorus' "Ohana Cookbook," featured on "Hawaii's Kitchen" Sunday. The show airs at 5:30 p.m. on KHON/Fox.

Timbo's Favorite Salmon Dinner

1/2 onion, chopped
1 tablespoon margarine
1 large can cream of mushroom soup
1/2 can milk (using the empty soup can)
1 large can red salmon, drained
1 tablespoon fresh or dried parsley flakes
Salt and pepper, to taste

Sauté chopped onion in margarine over low heat. Add soup and stir. Add milk, stir to combine. Add salmon, breaking in pieces. Add parsley flakes, salt and pepper.

Simmer on low heat 20 minutes. Stir and serve.

Manicotti

1 pound ground beef
2 cloves garlic, minced
8 ounces mozzarella cheese
2 cups cottage cheese
1 package frozen chopped spinach, thawed and drained
2 tablespoons dried parsley
14 to 16 large manicotti noodles
28 to 32 ounces prepared spaghetti sauce
1/2 cup Parmesan cheese

Preheat oven to 350 degrees. Grease a 9-by-13-inch baking dish.

Brown beef in frying pan with garlic. Drain.

Grate mozzarella into a bowl. Add cottage cheese, spinach, parsley and half the parmesan cheese. Mix in browned beef.

Stuff each noodle with meat mixture. Place in a single layer in baking dish. Cover with spaghetti sauce; sprinkle with remaining Parmesan cheese.

Cover pan with foil and bake 45 minutes. Remove foil and bake another 15 minutes. Cool for 15 minutes before serving.
