Healthy curry in a hurry

These dishes were prepared by Audrey Wilson of AJ's Volcano Cottage on "The Electric Kitchen" Sunday, in an episode titled "Simple, Ono and Healthy." The program airs at 4:30 p.m. on KITV/ABC.

Healthy Yellow Curry with Lean Pork

Cooking spray
1/4 cup Thai yellow curry paste
1 teaspoon curry powder
1-1/2 cups thinly sliced lean pork loin
1/2 teaspoon coconut extract
2/3 cup non-fat dry milk, mixed with water to make 1 cup
2 medium potatoes or sweet potatoes, peeled, cubed and partially cooked
2 tablespoons Sugar Twin brown sugar replacement
3 tablespoons salt-free soy sauce (available in Japanese grocery stores)

Spray wok with cooking spray. SautŽ curry paste and curry powder 1 minute. Brown pork; add coconut extract, milk mixture and potatoes; bring to boil, then simmer 5 minutes, until pork and potatoes are cooked.

Add Sugar Twin and soy sauce; simmer until Sugar Twin is dissolved. Serve with Cucumber Relish (below). Serves 4.

Cucumber Relish

6 tablespoons Splenda granular sugar replacement
2 tablespoons vinegar
1/4 cup sliced or diced cucumbers
2 tablespoons ground roasted peanuts
1 shallot, thinly sliced
Jalape–o peppers slices to taste (optional)
1 tablespoon chopped cilantro

In a small saucepan, combine Splenda and vinegar; bring to a boil and cook until thickened.

Add remaining ingredients and marinate 2 to 4 hours. Makes about 1/2 cup.
