Lime juice
‘cooks’ raw fish

This dish was prepared by singer Owana Salazar on "Hawaii's Kitchen" Sunday. The show airs at 5:30 p.m. on KHON/Fox.

Poisson Cru Tahitian Raw Fish

1 pound raw ahi
2 cups water
1/4 cup Hawaiian salt
1 medium Maui onion, sliced
2 cucumbers, seeded and sliced
2 medium tomatoes, sliced
1 clove garlic, minced
Juice from 4 to 5 limes
1 small head lettuce
1-1/2 cup coconut milk, thawed if frozen

Slice ahi sashimi-style and place in bowl. Cover with water. Stir in salt. Let fish soak while chopping other ingredients.

Drain ahi well. Toss with vegetables and garlic. Add lime juice and let stand about 3 minutes, until partially "cooked."

Line serving bowl with lettuce. Spoon in marinated fish mixture. Top with coconut milk.
