Spam gussied up
in casserole

This dish was prepared by musician Nathan Aweau on "Hawaii's Kitchen" Sunday. The show airs at 5:30 p.m. on KHON/Fox.

Spam Spectacular

1 small potato, peeled and cut in 1/4-inch slices
1-1/2 tablespoons butter
1 can Spam, cut in bite-sized pieces
» Mushroom Sauce:
2 teaspoons butter or margarine
2 large mushrooms, chopped
1/4 teaspoon salt
1/4 teaspoon pepper
2 teaspoons flour
1/3 cup chicken or beef broth
1/4 cup cream
1 clove garlic

Preheat oven to 350 degrees.

To make sauce: Melt butter in pan and add mushrooms. Add salt and pepper and stir. Let simmer about a minute, then sprinkle with flour and stir until well-combined. Add broth and cream. Add garlic, stir and let simmer 2 minutes.

Line the bottom of an oven-safe bowl with potato slices. Top with butter, then Spam slices. Pour mushroom sauce over Spam; stir a little. Bake 20 minutes.

Stir, then bake 25 minutes more or until brown.
