Sweet abodes

KCC’s pastry chefs
create a wonderland
of gingerbread

If you had made it all the way through cooking school and were officially recognized as a graduate, would you come back to school for more work?

Perhaps if school could give you something you can't get at home. Say, the warming scent of gingerbread.

A team of recent Kapiolani Community College graduates -- Bobby Sohns, Tiffany Luke, Linda Iboshi and Lee Jackson -- were back on campus recently to join current students in a four-week project building a gingerbread village.

Chef-instructor Ernst Hiltbrand worked with them to sketch out a design, then build a scale model out of cardboard. Then came the baking of the gingerbread pieces.

The result is a detailed gingebread castle surrounded by a gingerbread town, all the pieces held together with chocolate and detailed with marzipan and gelatin.

It's not a lonely place, either. A chocolate Santa lives there, along with many little sugary friends.

Hiltbrand makes an annual project out of the gingerbread affair and it has grown elaborate over the years.

The wonderland will be on display in KCC's Ka Ikena dining room, eventually moving to the Pacific Beach Hotel to sweeten up the holidays.
