Try a dish
of Tofu Poke


This dish was prepared by Paul Uyehara, president of Aloha Tofu Factory and his wife, Misa, of KZOO radio, on "The Electric Kitchen" Sunday. The program airs at 4:30 p.m. on KITV/ABC.

Tofu Poke

3 (12-ounce pieces) deep-fried tofu, cut into bite-size cubes
2 teaspoons toasted sesame seeds
1/4 cup coarsely chopped ogo
2 tablespoons chopped green onion
1 teaspoon grated ginger
1/2 long red chili pepper, seeded and chopped
1/2 block (7 ounces) kamaboko (fish cake), slivered, optional
1/2 cup chopped onion, optional
1/4 cup soy sauce
1 tablespoon sesame oil

Place tofu in pan and cover with water; boil 1 minute. Drain. Place in a bowl; add sesame seeds, ogo, green onion, ginger, chili pepper, kamaboko and onion; toss.

Combine soy sauce and sesame oil; pour over tofu mixture. Toss lightly and chill 30 minutes. Serves 6.
