Family recipes take wing
in new cookbook


Chicken Alice must've had some way with chicken wings. Requests for this long-ago restaurateur's long-ago hot wings come in all the time. Haven't found her or her recipe yet, though.

But for Jon Shimamoto, Janice Kondo and everyone else who's hungry for those wings, here's a substitute. Not the real thing, but spicy and crunchy, plus turning to this recipe means I can promote another good-cause cookbook, "Sssimply Sensational," being sold to benefit a Mililani High School's Project Graduation 2005.

Like most cookbooks of this ilk, "Sssimply Sensational" is a collection of favorite recipes from family and friends, plus a few celebrities. Unlike most, though, it is very attractively designed with a snake theme throughout, and cleverly packaged in a three-ring binder that makes it extremely easy to use.

"Sssimply Sensational" will be sold from 6:30 to 8:30 p.m. Fridays through Oct. 29 at the Mililani Town Center and at the Christmas Crafts and Food Expo at Blaisdell Center Nov. 26 to 28. It is also available at Baldwin's Sweet Shop in the Waimalu Shopping Center, Tanioka's Seafood and Catering in Waipahu and Kilani Bakery in Wahiawa.

It sells for $12.

Korean Chicken Wings

LoriAnne Nonies' Mom

3 to 4 pound chicken drummettes
Salt and pepper, to taste
Flour for dusting
Vegetable oil for frying
» Sauce:
1/3 cup sugar
1/3 cup soy sauce
2 cloves garlic, minced
2 tablespoons sesame seeds
1 tablespoon sesame oil
1/2 teaspoon red pepper flakes
Chopped green onion, to taste

Season chicken with salt and pepper. Dredge chicken in flour to coat.

Heat oil to 375 degrees and deep-fry chicken until golden and crisp. Drain.

Combine sauce ingredients. Dip chicken in sauce while still hot. Serves 6.

Approximate nutritional analysis (using 3 pounds chicken, not including salt to taste): 340 calories, 20 g. total fat, 5 g. saturated fat, 80 mg. cholesterol, 900 mg sodium, 13 g. carbohydrate, 27 g. protein.

Oyster Sauce Wings

3 to 4 pounds chicken wings
1/2 cup flour
Vegetable oil for frying
» Sauce:
1/2 cup oyster sauce
3 tablespoons sugar
1/3 cup water
1/2 teaspoon pepper

Coat wings with flour.

Heat oil to 375 degrees. Deep-fry wings until golden and crisp.

Combine sauce ingredients. Dip wings in sauce. Serves 6.

Approximate nutritional analysis (using 3 pounds chicken, not including salt to taste) 300 calories, 18 g. total fat, 5 g. saturated fat, 60 mg. cholesterol, 950 mg sodium, 12 g. carbohydrate, 23 g. protein
