Rib-roaring success

A rack of baby back ribs, wrapped in prosciutto and rubbed all over with a mix of sugar and spice won the "Summer Sizzle" barbecue contest at Kakaako Kitchen.

Guy Maynard's entry won him a Weber gas grill donated by GasPro Hawaii.

Ten finalists participated in a grill-off July 11, with the public invited to taste the chicken and pork dishes. Proceeds from ticket sales went to the Muscular Dystrophy Association.

Maynard's winning recipe:

Ribs in a Blanket

3 racks babyback ribs
1/4 cup garlic pepper
1/4 cup paprika
1 cup dry wine
Sliced prosciutto
>> Brine:
1 cup Hawaiian salt
1 cup brown sugar
6 cloves garlic
2 bay leaves
1 tablespoon peppercorns
>> Spice rub:
1/4 cup brown sugar
1/4 cup onion powder
1/8 cup dried Italian seasoning
1/8 cup kosher salt

Soak brine ingredients in 5 gallons water until salt and sugar dissolve. Place ribs in brine and refrigerate overnight.

Preheat oven to 350 degrees.

Rinse ribs and pat dry. Sprinkle with garlic pepper and paprika. Place in a large foil pan and add wine. Cover and bake 1-1/2 hours.

Combine spice rub ingredients. Rub into ribs.

Grill ribs over indirect heat about 45 minutes. Cut each rack into individual riblets and wrap each riblet in a prosciutto slice. Return to grill and cook until prosciutto browns.

Free sharpening

The Compleat Kitchen is offering free knife sharpening, 11 a.m. to 2 p.m. today, at its Kahala Mall store only.

A Wusthof-Trident representative will sharpen one knife free, and addition knives (up to five per customer) for $3 each.

Culinary journey

Maui chef Beverly Gannon is hosting a culinary tour of Maui in September that will include cooking classes, visits to farms and local eateries, and dinner in Gannon's Upcountry home.

The five-day-six-night tour will end with the hands-on preparation of a luau.

Gannon is one of the founding members of the Hawaii Regional Cuisine group and was nominated last year for the James Beard Foundation Award for best chef of the Northwest/ Hawaii. She owns Hali'imaile General Store and Joe's restaurants as well as Celebration's Catering.
