Salmon makes
a healthy dish


This dish was prepared by Joan Foley and Susan Spegar on "The Electric Kitchen" Sunday, on an episode called "Healthy Cooking in Paradise." The program airs at 4:30 p.m. on KITV/ABC.

Salmon with Chinese Pesto

1 2-pound salmon fillet
1 teaspoon minced garlic
3 tablespoons minced ginger
1/4 cup minced green onions
1/4 cup minced Chinese cilantro, optional
1/4 cup canola oil
1/4 teaspoon pepper
1 teaspoon low-sodium soy sauce
1 teaspoon sesame oil

Preheat oven to 350 degrees. Rinse salmon and pat dry; remove bones. Place on a sheet of heavy foil large enough to wrap salmon.

Combine remaining ingredients; rub into salmon. Wrap salmon fillet in foil and seal.

Bake 20 to 25 minutes or until salmon is just opaque in center. Carefully open foil envelope to allow steam to escape. Serves 6.
