From Cheryl Chee Tsutsumi's "101 Great Tropical Drinks," come these suggestions with holiday flair.

Peppermint Penguin

1/2 ounce green creme de menthe
1/2 ounce chocolate mint liqueur
3 Oreo cookies
3 ounces light cream

Blend ingredients with 1 cup of ice until the ice is crushed. Pour into a parfait glass. Garnish with whipped cream, a cookie and a cherry.

Fudge Mud Pie

2 ounces dark creme de cacao
2 ounces fudge ice cream topping
1/2 chocolate candy bar
2 scoops ice cream
A few ice cubes
Cream

Blend all ingredients except cream. Pour into glass. Fill remaining space in glass with cream; stir.

Note: Candy bar suggestions include Almond Joy, Butterfinger, Reese's Peanut Butter Cup, Milky Way, Nestle's Crunch or Snickers. Select an ice cream flavor to match.

Cranberry Apricot Splash

2 ounces fresh lime sour (see note)
1 ounce apricot nectar
2 ounces cranberry juice
Splash soda water
Lime slice and li hing cranberry, for garnish

Pour ingredients into a pint jar; cover and shake. Serve in a 10-ounce martini glass. Float a slice of lime topped with a li hing cranberry in the glass.

Note: Lime sour is equal parts lime juice and simple syrup (2 parts sugar boiled in 1 part water to dissolve).
