Rice, sashimi and your choice of garnishes fill a sushi hand roll.



Wrap up the old year
with a sushi party


Consider chef D.K. Kodama's suggestion for a sushi hand-roll party when planning your New Year's get-together.

To entertain six, assemble these ingredients:

12 cups sushi rice (recipe follows)
1 pound sashimi-grade ahi
4 Japanese cucumbers
2 avocados (preferably Haas)
15 sheets nori
3 tablespoons sesame seeds
1/2 cup wasabi paste
1 cup soy sauce
1/2 cup pickled ginger

You'll also need to make up a Crab Mix (3 cups crabmeat with 6 tablespoons mayonnaise), plus 3 cups of Spicy Tuna Mix (See D1)

Now, to proceed:

>> Slice or chop the ahi.

>> Cut the cucumbers into sticks about 4 inches long and the avocados into 1/4-inch thick slices.

>> Cut nori sheets in half.

>> Set out all the ingredients and put your guests to work.

Making a handroll is a simple matter of placing a sheet of nori across your palm, layering it with the fillings of choice and rolling it up (a California Roll is crab mix, avocado and cucumber).

The results may not be pretty to start with, but your guests will get better as they go.

Sushi Rice

12 cups hot, cooked, short-grain white rice
>> Sushi-Su
1 cup rice vinegar
2/3 cup sugar
2 tablespoons kosher salt
1-inch-square piece konbu (dried kelp)

To make Sushi-Su: Bring vinegar to boil over high heat. Add sugar and salt; stir. Reduce heat to medium and cook to dissolve sugar and salt, about 5 minutes. Remove from heat; add konbu. Cool.

Place rice in a tub or wooden bowl. Pour Sushi-Su over rice and mix with a rice paddle ("cut" seasoning gently into rice). Be sure to work quickly and don't overmix, or rice will get mushy.
