Coach’s cheesecake
a winner


This dish was prepared by University of Hawaii quarterback coach Dan Morrison on "The Electric Kitchen" Sunday. The program airs at 4:30 p.m. on KITV/ABC.

Chocolate Chip Cheesecake

Adapted from "Mrs. Fields Best Cookie Book Ever!" by Debbi Fields (Time-Life Books, 1999)

>> Crust:
About 1 cup chocolate sandwich cookies
2 tablespoons butter, softened

>> Filling:
16 ounces cream cheese, softened
1 cup sugar
16 ounces sour cream
3 large eggs
1 tablespoon vanilla extract
1-1/2 cups chocolate chips, divided

To make crust: Crush cookies into coarse crumbs. Add butter and mix well. Press crumb mixture into bottom and slightly up the side of a 9-inch springform pan; refrigerate while preparing filling.

Preheat oven to 350 degrees.

To make filling: Beat cream cheese with an electric mixer until smooth. Blend in sugar and sour cream. Add eggs and vanilla; mix until smooth. Stir in 1 cup chocolate chips.

Pour cream cheese mixture evenly over crust; smooth top. Sprinkle remaining 1/2 cup chocolate chips evenly over top. Bake 30 to 40 minutes. Turn oven off and leave cheesecake in oven for 1 hour. Remove from oven and chill until firm, 3 to 4 hours. Serves 12.
