Delicata and sweet dumpling


Winter squashes are overflowing in the markets, making this an ideal time to enjoy this nutritious and delicious vegetable. A large squash, though, can be a bit much for an ordinary meal. The answer: Delicata and Sweet Dumpling squash, two varieties that are perfect for small servings. They are cute as they are tasty.

The basics: The Delicata and Sweet Dumpling are two forms of the same variety of squash. Delicata is an oblong squash that grows to 5 to 9 inches in length, while the Sweet Dumpling is shaped like a miniature pumpkin and often weighs less than a pound.

Both have yellow- to cream-colored skin with dark green striations. The flesh ranges from light yellow to light orange, and the texture is on the drier side, similar to butternut squash. The flavor resembles that of a sweet potato, so it is also referred to as sweet potato squash.

Like other winter squash varieties, the Delicata and Sweet Dumpling are a good source of potassium, iron and vitamins A and C.

Selecting: Look for squash that is heavy for its size with hard, blemish-free skin. Tender skin can indicate immaturity.

Storing: Hard squashes can be stored in a cool, dark area for up to a month. After cutting squash, wrap tightly in plastic and store in the refrigerator for a week or so.

Use: Wash the outside shell thoroughly. These squashes can be cooked whole or halved. Make sure to poke holes in the skin if cooking whole. Otherwise, cut squash in half lengthwise, then remove seeds and membrane. Be sure to use a heavy, sharp knife and place squash on a towel or sturdy surface when cutting.

These squashes may be steamed, baked or cooked in a microwave oven. If using a microwave, add about a quarter-cup of water and cook for six to 10 minutes, split-side down.

Cooked squash can be enjoyed plain or mixed with some butter and herbs. Delicata and Sweet Dumpling can also be stuffed or enjoyed in soups and purées. Or, simply top with butter and sprinkle with brown sugar for a sweet treat.

Where to buy: Delicata and Sweet Dumpling squash will only be around for a few more weeks at select markets and are priced at $1 to $2 a pound.
