Broccoli brightens
garlic prawns


These dishes were prepared by Kit Yiu of Kit 'n' Kitchen on "Hawaii's Kitchen" Sunday, a rebroadcast of the Jan. 19 episode. The show airs at 5:30 p.m. on KHON/Fox.

Garlic Prawns

7 prawns (21/25-count size)
6 broccoli florets
1 teaspoon garlic purée
1/2 teaspoon salt
1 cup prepared alfredo sauce
10 ounces spaghetti, cooked
2 tablespoons garlic oil

Sauté shrimp and broccoli with garlic purée and salt until half-cooked. Add alfredo sauce. Bring to a boil. Remove from heat.

Toss spaghetti with garlic oil. Pour shrimp sauce over pasta.

Red Wine Oxtail Stew

3 pounds oxtail
3-3/4 cups red wine
1 onion, sliced
2-1/2 cups beef stock
2 tablespoons soy sauce
1 carrot, sliced

Soak oxtails overnight in 2-1/2 cups of the wine. The next day, boil oxtails 20 minutes, then trim fat.

Sauté onions with a piece of oxtail fat; add oxtails and sauté until onions are soft. Add remaining red wine, beef stock and soy sauce. Bring to a boil and place carrots atop oxtails. Return to a boil, then reduce heat and simmer 2-1/2 hours or until meat falls off the bones.
