Duckhorn Wine Dinner: Winemaker Mark Beringer, of Duckhorn Vineyards, will host a five-course dinner, 6:30 p.m. Tuesday at Michel's at the Colony Surf. Chef Hardy Kintscher's menu: seafood salad of king clam, Maine lobster, shrimp and scallops (with 2001 Napa Valley Sauvignon Blanc); terrine of foie gras (2000 Goldeneye Anderson Valley Pinot Noir); salmon St. Jacque (2000 Paraduxx Napa Valley Red Wine); and medallion of venison (2000 Napa Valley Cabernet and a 2000 Napa Valley Merlot). Foods of Jalisco: Compadres Bar & Grill is featuring dishes from chef Alfonso Navarro's native Jalisco, Mexico, through July. Specials include Grilled Chile Relleños, Tomato Navarro soup, Carne Asada Topopo (a salad topped with grilled steak) and Bandolero de Pollo (chicken on a skewer). Call 591-8307.

A Summer Night in Tuscany: Banfi wines from Italy are featured in a four-course dinner, 6:30 p.m. July 23 at Sergio's. Chef Matt Johnson's menu: calamari on mesclun greens (with 2001 Principessa Gavia); pasta with squash, anchovies and onions (2000 Centine Rosso di Roscana); and Muscovy duck breast and leg confit (1995 Banfi Brunello di Montalcino). Randal Ishizu, left, executive chef of the Marriott Ihilani Resort and Spa, has been awarded Marriott's International Award of Culinary Excellence, one of six chefs to be recognized out of 450 in the hotel chain. Ishizu, a Leeward Community College graduate, helped open the Ihilani in 1993. He continues to mentor students, as he did two years ago at an LCC dinner designed to give students experience working with professional chefs.
