Lanai culinary
celebration begins


Celebrity chefs and superstar winemakers begin their yearly trek to Lanai next month as part of the 2003 Visiting Artists Program.

Four guest chefs have been paired with select wineries for a series of dinners and cooking demonstrations at the Manele Bay Hotel and the Lodge at Koele.

The series begins June 14 and 15 with chef Michael Cimarusti, of Water Grill in Los Angeles, and Fred Scherrer, of Scherrer Winery.

Cimarusti's restaurant, named the best seafood restaurant in Southern California by Zagat's Restaurant Survey, is known for its French-inspired contemporary cuisine. His menu features such intriguing pairings as diver scallops served with apples purée and walnut vinaigrette, squid with mint and arugula, blue crab with mango.

Scherrer has turned grapes from his family's vineyard in California's Alexander Valley into award-winning zinfandels and now makes zins and pinot noirs from grapes grown in the Russian River Valley and Sonoma Coast.

The two will host wine dinners June 14 and 15 at the Lodge, and a free cooking demonstration on the 15th in the resort's lobby. Call 800-321-4666.

Indian fusion: Chef Floyd Cardoz, of Tabla in New York City, and Bruce and Barbara Neyers, of Neyers Vineyards in Napa Valley, Calif.; July 12 and 13 at Manele Bay.

Contemporary Greek: Chef James Botsacos, of Molyvos in New York City, and Randall Grahm, of Bonny Doon Vineyard in California; Aug. 9 and 10 at Manele Bay.

California-French: Chef Tim Goodell, of Aubergine, Troquet, Whist and Red Pearl Kitchen, all in Southern California, and Nunzio Alioto, master sommelier and managing partner at Alioto's Restaurant in San Francisco; Oct. 11 and 12 at the Lodge.

Feelin' crabby?

Dixie Grill's annual Crabfest begins tomorrow and runs through June 29 at both restaurant locations.

Chef David Saccomanno's special entrees for the festival include a crab-stuffed artichoke, New York steak and snow crab, soft-shell crab and shrimp etouffée and soft-shell or crab cake po'boy.

Daily specials through Crabfest:

Mondays: $20 all-you-can-eat-in-an-hour snow crab, 3 to 6 p.m., $20

Tuesday: Bucket of soft-shell crabs, $15

Wednesday: Louisiana crab and shrimp boil, $15

Thursday: Beer-battered crab cakes, $3 each

Friday: Snow crab with spare ribs, $18

Saturday: Cioppino with Dungeness crab, $18

Sunday: Crab-stuffed blackened ahi, $14

J.P. Smoketrain and Dominic Leonard play at the Ward Avenue location on Tuesdays, 6:30 to 9:30 p.m.; the Chris Vandercook Trio plays at the Jazz Brunch, 11:30 a.m. to 2:30 p.m. Sundays at Aiea.

Dinner and wine

Chalk Hill Wine Dinner: Yves Sauboua, sommelier of Chalk Hill Estate, hosts a five-course dinner, 6 p.m. Thursday, 3660 on the Rise. Wines to be featured include the Estate Bottled Sauvignon Blanc 2000, the 1999 chardonnay, '97 merlot and '98 cabernet. The menu: Grilled Indian Prawn, Slow-Roasted Salmon, Pan-Roasted Quail, Fire-Roasted Double Lamb Chop and Poached Pears with Stilton Cheese. Cost is $65. Call 737-1177.

Clos Pegase Wine Dinner: Bruno Walker will represent the winery at a four-course dinner to feature its chardonnay, pinot noir and cabernet sauvignon, Thursday at Padovani's Restaurant. The menu: Potato Tart with Kiawe-Smoked Salmon & Caviar, Roasted Langoustines in Olive Oil, Grilled Cote de Bouef and Small Apricot "Clafoutis" with Almond Ice Cream. Seatings begin at 6 p.m. Cost is $48, $73 with wines. Call 946-3456.
