Maui onions pop
with nutty flavor


This dish was prepared by Rowena Felice, winner of the Maui Onion Festival recipe contest, on "Hawaii's Kitchen" Sunday. The show airs at 5:30 p.m. on KHON/Fox.

Maui Onion Poppers

2 large Maui onions
1 clove garlic, minced
1/2 cup chopped macadamia nuts
1/4 cup seasoned onion powder
1-1/2 cups panko
1 teaspoon salt
2 tablespoons butter
2 egg whites, beaten
1/4 pineapple, chopped
>> Spicy Pineapple Dipping Sauce:
3 tablespoons cider vinegar
2 tablespoons pineapple juice
1 tablespoon lemon juice
1 tablespoon salt
1 tablespoon crushed pepper flakes, optional

Slice onions into thick rings. Separate rings. Finely chop the largest rings to make about 1/2 cup. Mix chopped onion, garlic, nuts, onion powder, 1/2 cup of the panko, salt and butter. Stuff mixture into remaining onion rings. Dip stuffed rings into egg white and roll in remaining panko. Deep fry.

To make sauce: Whisk ingredients together. Serve with onion rings.
