Spicy shrimp
makes ono sushi


This dish was prepared by Troy Teruya, of Catch of the Day Sushi, on "Hawaii's Kitchen" Sunday, in a rebroadcast from November. The show airs at 5:30 p.m. on KHON/Fox.

Double Shaka Spicy Shrimp Temaki

1/3 cup sushi rice (recipe follows)
1/2 sheet nori
1 stick Japanese cucumber
10 radish sprouts
1 slice avocado
1 teaspoon EACH Spicy Shrimp and Spicy Tuna (recipe follows)

Lay nori on a dry, flat surface. Place sushi rice on one side. Layer remaining ingredients in order on top of rice. Roll into a cone. Serves 1.

Spicy Shrimp or Tuna

1 cup butterflied shrimp (boil in water 3 to 5 minutes) or raw ahi
1-1/2 teaspoons sriracha (Thai chili sauce)
1/2 teaspoon shichimi (Japanese 7-spice red pepper mix)

Combine shrimp or ahi with sriracha sauce and shichimi.

Sushi Rice

1 cup rice vinegar
1/2 cup sugar
1/8 cup rock salt
4 to 5 cups cooked rice

Heat vinegar, sugar and rock salt, stirring to dissolve. Stir into hot rice and mix well.
