oxtails flavor


This dish was prepared by Kit Yiu of Kit 'n' Kitchen on "Hawaii's Kitchen" this week. The show airs at 5:30 p.m. Sunday on KHON/Fox.

Red Wine Oxtail Stew

3 pounds oxtail
3-3/4 cups red wine
1 onion, sliced
2-1/2 cups beef stock
1 carrot, sliced

Soak oxtail overnight in 2-1/2 cups of the wine.

The next day, boil oxtail 20 minutes, then trim fat.

Sauté onions with oxtail; add remaining red wine, beef stock and carrots. Reduce heat and simmer 2-1/2 hours.
