In its debut last Wednesday, ABC's "Celebrity Mole Hawaii" attracted 10.7 million viewers, the network's largest audience in that time slot in more than a year. The show's cast includes Stephen Baldwin, above. The show placed 45th overall. Last week's No. 1 show was CBS' "CSI: Crime Scene Investigation," with NBC's "Friends" close behind.

Salsa the week away
with special events
around town


A week's worth of lively salsa entertainment begins tomorrow with the weekly "Salsa After Dark" dance night at Rumours in the Ala Moana Hotel, from 8 p.m. to 2 a.m. with a $5 cover for 21 and over.

For four days afterward, there'll be three hours of dance workshops and lessons from 10 a.m. to 1:30 p.m. daily at the Waikiki Beach Marriott Hotel Rooms 1 and 2. Learn all levels of salsa, cha-cha, merengue and casino rueda from instructors from Los Angeles, New York, Miami and London. Cost is $30 per class.

The rest of the schedule:

Friday: Local salsa band Son Caribe and New York deejay Henry Knowles at the Marriott Hotel's main ballroom, 9:30 p.m. to 2 a.m., with a $20 cover.

Saturday: "Salsa in Paradise Gala Night" featuring, direct from Los Angeles, the veteran and respected Johnny Polanco Y Su Conjunto Amistad, 8 p.m. to 2 a.m. Admission is $40.

Sunday: DJ Alberto, Son Caribe and Salsa Brava will be part of the regularly scheduled Sunset on the Beach at Queen's Surf, 4 to 6 p.m., free. From 9 p.m. to 2 a.m., the Marriott Hotel ballroom will hold a "Salsa Pajama Party," $20.

Monday: Dance party with DJs Ray Cruz and Rod Moreno at Planet Hollywood, 9 p.m. to 2 a.m. Cover is $10; 21 and over.

Tuesday: More DJ dance music at Zanzabar in the Waikiki Trade Center, 9 p.m. to 4 a.m. Cover is $5 for 18 and over.

Learn from the pros

First, we sharpen the knife. Then, we make soup. And by the time the chef/instructors at Kapiolani Community College are done with us, we will no longer fear the words "yeast," or "meringue."

Weekdays, Grant Sato and Dan Wetter teach kitchen skills to aspiring chefs in KCC's culinary programs. Saturdays, they turn their attention to those who would just like to be less intimidated by an open flame.

Sato teaches the basics -- soups and sauces, braising and poaching. Wetter teaches pastry arts, up to and including lilikoi chiffon pie. Classes begin Jan. 25 and continue on Saturdays through March 1. Class times are 8 a.m. to noon, with Sato teaching in Ohia Room 109 and Wetter in the bakeshop. Call 734-9211 to register, and make it early; enrollment is limited by kitchen space.

Knife Skills and Basic Cutting Techniques: This is the only class that ends at 10:30 a.m. instead of noon; Jan. 25; $38.
Stocks: Learn traditional methods; Feb. 1; $38.
Soups: The three classifications -- clear, thick and specialty soups; Feb. 8; $40.
Classic Sauces: The mother sauces -- bechamel, veloute, demi-glace, tomato; Feb. 15; $38.
Sautéing and Quick Sauces: Includes deglazing techniques and easy sauces; Feb. 22, $40.
Braising and Simmering: March 1; $40.
Poaching: March 8; $40

Baking classes

Cookies Part I: Chocolate Crinkles, Butter Stars, macaroons; Feb. 1; $38.
Quick Breads 101: Biscuits, muffins and scones; Feb. 8; $38.
Yeast Breads: Cinnamon rolls, sweet bread and malassadas; Feb. 22; $38.
Pies, Fillings and Meringues: Lilikoi chiffon, macadamia nut cream and apple pies; March 1, $38.

Lessons in pork

Kapiolani Community College is also offering "Pigs to Pork," a two-hour demonstration on how a pig carcass is turned into retail cuts, 9 to 11 a.m. Jan. 28.

Halina M. Zaleski, associate specialist in swine at the College of Tropical Agriculture and Human Resources at the University of Hawaii-Manoa, will explain how pork is graded and about the pork industry.
