A new twist
on caramel apples


"The Electric Kitchen" airing in the first half of October features guest demonstrator Denise Modglin with "Fun Recipes for Halloween."

"Electric Kitchen" airs at 9:30 a.m. Sunday, 8 p.m. Monday, 5 p.m. Tuesday and 6 p.m. Thursday on Oceanic Cable Channel 16. It also airs on Maui at 8:30 p.m. Thursday on Calabash Channel 44 (52 in Lahaina) and on the Big Island at 5 p.m. Monday and 5:30 p.m. Wednesday on Na Leo O Hawaii Channel 55 in Hilo and Kona.

All the recipes from the show, as well as an archive of recipes dating to 1995, are available at the Hawaiian Electric Co. Web site, www.heco.com.

Caramel-Apple Cupcakes

1 (18-1/4 ounce) box carrot cake mix
2 cups pared and chopped tart apples
20 pieces caramel candy (see note)
3 tablespoons milk
1 cup chopped pecans
12 flat wooden skewers

Preheat oven to 350 degrees. Grease a 12-cup muffin pan.

Prepare cake mix according to package directions; fold in apples. Spoon into prepared muffin cups. Bake 20 minutes. Cool.

Combine caramels and milk in a saucepan. Cook on low heat, stirring until smooth. Spread over cupcakes. Sprinkle with pecans. Insert a skewer into the center of each cupcake so each one looks like an apple on a stick. Serves 12.

Note: If using caramel squares, omit milk.
