Radio pair put food on platters

These dishes were prepared by Charly Espina and Shannon Scott of KCCN radio on "Hawaii's Kitchen" this week. The show airs at 5:30 p.m. Sunday on KHON/Fox. All the recipes may be found on the Web site, khon.com.

Pordagee Won Tons

1 can Spam, sliced
2 zucchini, sliced
Won ton pi wrappers
Oil for deep-frying

Wrap Spam and zucchini slices in won ton pi. Fry in hot oil. Serve with buttermilk, ranch dressing or sauce of your choice.

Kamaboko Cucumber

1 chikawa fishcake (with hollow center )
1 cucumber, peeled (same size or smaller than the hole in the fishcake)
1 cup mayonnaise
2 tablespoons soy sauce

Slide whole cucumber into the kamaboko. Slice. Mix mayonnaise and soy sauce in small dish. Serve with kamaboko slices.
