Make fake chicken out of tofu

These dishes were prepared by Carol Lent of Down to Earth Natural Foods on "Hawaii's Kitchen" this week. The show airs at 5:30 p.m. Sunday on KHON/Fox.

Mock Chicken Tofu

1 block firm tofu, well-drained
3 tablespoons safflower oil or butter
3 tablespoons soy sauce or liquid aminos
1/3 cup nutritional yeast
2 teaspoons Spike seasoning salt
1/4 teaspoon pepper (optional)

Break tofu into random-size pieces, about 1-inch square. Heat oil in a non-stick skillet. Cook tofu without turning about 5 minutes. Turn and cook about 4 more minutes. Turn off heat. Add soy sauce and stir to coat tofu pieces. Add yeast, Spike and pepper. Toss to coat.

Mock Chicken Wrap

1 package whole wheat tortillas or chapatis
1 medium tomato, halved and sliced
Lettuce
>> Filling:
2 cups Mock Chicken Tofu (above)
1/4 cup natural eggless mayonnaise
1 carrot, grated and chopped
1/2 stalk celery, diced
1 tablespoon sweet pickle relish
Combine filling ingredients.

Heat tortillas in frying pan or over gas stove-top flame. Arrange stuffing, lettuce and tomato slices in center of tortilla. Roll and cut in half.
