Go bananas over
Matteo’s dishes

Dishes prepared by Stanford Iyechad and Russell Druce of Matteo's Italian Restaurant on "Hawaii's Kitchen" this week. The show airs at 5:30 p.m. Sunday on KHON/Fox. Here are a few of the dishes. All the recipes may be found on the Web site, khon.com.

Angel Hair Pomodori

1 tablespoon garlic, minced
3 tablespoons olive oil
2 1/2 cups tomatoes, diced
1/4 cup fresh basil, chopped
6 ounces uncooked angel hair pasta
4 tablespoons butter
Salt and pepper to taste
2 sprigs basil for garnish

Sauté the garlic in olive oil until lightly brown, then add tomatoes and basil.

Meanwhile, add pasta to boiling water and cook 3-4 minutes, until al dente. When pasta is ready, add butter, salt and pepper to sauce. Toss with pasta and garnish with basil sprigs.

Frank Sinatra's Bananas Foster

2 tablespoons unsalted butter
2-3 tablespoons brown sugar
Juice of 1 orange
2 bananas, sliced
3 tablespoons EACH banana liqueur, orange curacao and rum
Cinnamon
4 scoops vanilla ice cream

Melt butter and sugar over medium heat, stirring until sugar has dissolved. Add orange juice and bananas. Stir in banana liqueur and orange curacao. Then pour in rum and ignite with a match. When flame burns out, season with cinnamon. Serve over ice cream.
