Turn seafood into ono spreads

Dishes prepared by chef Goran Streng of the Hawaii Prince Hotel on "Hawaii's Kitchen" this week. The show airs at 5:30 p.m. Sunday on KHON/Fox. Here is a selection of recipes from the show. All the recipes may be found online at www.khon.com.

Tarako and Crab Spread

1/4 cup tarako (crab roe)
1/2 cup crab meat
2 tablespoons mayonnaise
2 tablespoons chopped chives
Pepper to taste

Combine all ingredients, mix well and chill.

Ahi Tartar

1 cup finely diced ahi
>> Sauce:
1 egg yolk
3 tablespoons ketchup
2 teaspoons Dijon mustard
2 teaspoons Worcestershire sauce
2 tablespoons hazelnut oil
1/2 teaspoon chopped shallots
1/2 teaspoon Tabasco, or more to taste
1 tablespoon olive oil
1 teaspoon chopped chives
Juice of one lemon
White pepper and salt to taste

Combine sauce ingredients, mix well and chill. Mix into ahi.

White Shrimp Poke with Ocean Salad

1 pound Kauai white shrimp, peeled and deveined
Salt and pepper to taste
1 cup diced yellow and red tomato
1/2 cup prepared green ocean salad
1/4 cup chopped seaweed
1/2 cup Maui onion, finely diced
2 tablespoons soy sauce
1 teaspoon sesame oil
1/2 teaspoon fresh chili pepper, finely diced
1 tablespoon olive oil

Cut shrimp in half and sear lightly in olive oil. Season with salt and pepper. Place shrimp in a bowl with remaining ingredients. Mix well.

Tropical Salsa

1 medium papaya, diced
2 medium tomatoes, remove seeds and pulp, dice
1 small Maui onion, diced
1 tablespoon chopped cilantro
2 tablespoons balsamic vinegar
1/4 cup extra virgin olive oil
Juice of 1 lime
Pinch salt

Toss ingredients together.
